It all started with a simple longing — the longing for the taste of home. When our founder moved to Sydney from Hyderabad, he carried with him more than just luggage. He carried the recipes of his family, perfected over three generations in the old city's legendary food lanes.
But in Sydney, he couldn't find it. Not the real thing. Every "Hyderabadi biryani" he tried was missing something — the depth of flavour, the perfect layering, the soul. So he decided: if Sydney didn't have authentic Hyderabadi food, he would bring it here himself.

Originating in the royal Nizam kitchens of Hyderabad, dum pukht means "slow-breathing cooking." The handi (pot) is sealed with wheat dough, trapping all steam and aroma inside. The biryani cooks in its own juices over the lowest possible flame for over 45 minutes. This creates an intensely flavourful, aromatic dish where every grain of rice and every piece of meat is infused with spice.
Our signature spice blend includes cardamom, cloves, cinnamon, star anise, mace, nutmeg, bay leaves, black pepper, cumin, coriander, fennel, and more — 24 spices in total. Each is individually dry-roasted to release its essential oils, then stone-ground fresh every morning. This is what gives our biryani its complex, multi-layered flavour profile.
We follow the authentic kacchi biryani method — raw marinated meat is layered with par-cooked rice, saffron milk, fried onions, fresh mint, and coriander. The layers are crucial: they create distinct pockets of flavour that you discover as you eat. No mixing. No stirring. Just perfect, intentional layers.
Just before sealing the handi, we drizzle real saffron-infused warm milk and a touch of rose water over the top layer. This creates the iconic golden streaks through the rice and adds a subtle floral note that elevates the entire dish. It's a small detail that makes an enormous difference — and it's a detail most restaurants skip entirely.
